Kitchen Action: Paleo Tropical Chocolate Pudding

This is tasty, tasty, very VERY tasty! And, if you’re not there already, it will whisk you off to the tropics in one sweet mouthful.

It is also incredibly nutritious and made from totally natural ingredients.

The only difficulty you might encounter is the ‘deconstructing’ of the coconut itself. However, if opening a coconut is on your bucket list, now has come the time to cross that one off your list.

Chocolate and coconut pudding

adapted from Paleo in Melbourne

Ingredients

1 whole coconut (juice + flesh + a little flesh shaved for topping)

1 tbsp cacao powder

1 1/2 bananas (save the other half for topping!)

1/4 to 1/2 cup full fat coconut milk

Instructions

1. ‘Deconstruct’ the coconut – see websites above if you need help with this. After I have drained the juice, I usually stick the coconut in the oven (350F for about 20 mins) to make it easier to crack open.

2. Into the blender put: 1/2 the coconut juice (use the rest in a green smoothie!), the coconut flesh (you could save a little to shave/grate onto the top), the cacao powder, the bananas and the coconut milk.

3. Blend until smooth – add more liquid if needed.

4. Spoon into a pretty bowl and decorate with sliced banana and shaved coconut.

5. Enjoy the yumminess!

This saves well in the fridge for a good few days.
